For those in Bacolod who are craving for a taste of Singapore, you can enjoy one this weekend as L’Fisher Hotel heats up its international buffet a notch higher with the inclusion of a Singaporean Food Fest on September 19 and 20, 2015 at its Ripples Restaurant. It even allows guests a chance to fly to Singapore for free, in partnership with Cebu Pacific.

The Singaporean Food Festival is held as part of L’Fisher Hotel’s 25th anniversary celebrations. This culinary event will feature executive chef HK Tan of the NasiLemak Galleria and Singapore Food Republic.

The 60-year old restaurateur and chef shared, “We are excited to bring a taste of Singapore to Bacolod. We have heard so much of this city, its people, culture and its food. We look forward to delighting them with an authentic Singapore food experience.”

HK Tan is an interesting one, as he regaled us with his travels and food experiences. He emphasized the need for one to fully know and understand the cultures and details of local cuisines and the importance of sticking to the authentic taste.

Tan, who has been in the Philippines for nine years already, is in Bacolod City for the first time. He shared how he loved to travel and how he is also passionate about food, especially on teaching others how to enjoy authentic cuisines. To drive home his point, he shared how he has eaten – for nine years – the Filipino stewed pork dish, Kare-Kare, without putting the very important condiment, which is the shrimp paste. He said no local showed him the right way of eating Kare-Kare, thus, he wanted to show us how to eat Singaporean food with gusto.

Tan patiently demonstrated to us how to fully enjoy Hainanese chicken. First, he poured the special soy sauce on the rice and mixed it. Then he got a portion of the chicken and topped it with the ginger sauce and the chili sauce. He put a very small portion of rice on the spoon and scooped the chicken with the sauces and, viola! The taste was magical.

It was also interesting to note how other Singaporean dishes can be best eaten, like dipping bread on the sauces. Some of these dishes on spotlight, apart from the Hainanese chicken, are Beef Rendang, Char Kway Teow, Kangkong Sambal Blachan, Malaysian Chicken Curry, Taw Eu Bak, and the Hainanese Chicken Rice.

At P899 (about US$ 20)  per person, one can either feast on a dinner buffet on September 19, Saturday, from 6 o’clock in the evening until 10:30pm, or a lunch buffet on September 20, Sunday, from 11 o’clock in the morning until 2:30pm. This will include Ripple’s usual international buffet fare with the Singapore Food Festival selection.
