A Cabalen in Bacolod

“Cabalen!” is how people from the province of Pampanga in the Philippines call each other. Filipinos would generally refer to each other as “kababayan”, while Hiligaynons, from the western part of Visayas in the Philippines, would call their fellow Ilonggos or Negrenses as “kasimanwa”. Now, Cabalen is also referred to as the “eat-all-you-can” Filipino restaurant that is located all over the country, including Bacolod City and Iloilo City.

Although the first Cabalen “Eat All U Can, Eat All U Want” Restaurant opened in 1986 along West Avenue in Quezon City, the eatery traces its roots way back when the Nievera family that owns Cabalen first set up a Filipino delicacies counter called “Bahay Pasalubong” in San Fernando, Pampanga. Now Cabalen has grown and it offers an All-Filipino buffet. Select branches, such as the ones in SM Megamall, Robinsons Place Manila and SM Mall of Asia, offer a wider selection with its Filipino-Asian buffet.

If you are looking for Filipino cuisine with some Kapampangan flavor, Cabalen’s Bacolod restaurant will surely give you that. The one in SM Bacolod also offers a Filipino buffet at Php298 + value added tax, which is equivalent to Php333 per head (or around USD6.66). For children three feet to four feet in height, it only costs Php166.80 per head.

There’s a variety of food to choose from. Start it off with a serving of fresh greens at the salad bar, along with some tokwa’t baboy, crablets, crispy kangkong and atsara. Feast on the main dishes like Beringhe (it’s something like paella), dinuguan, pinakbet, and asadong manok, to name a few. There’s also lechon kawali, pritchon, sisig, and some grilled fishes and pork. You can also enjoy Pinoy desserts like halo-halo, kuchinta, puto with cheese, among others, as well as tropical fruits. They rotate their menu so you there’s a variety of food daily save for some regulars.

Now, if you want to enjoy Cabalen food at home or in the office or to a picnic, you can buy a take-out dish at only Php199.00 only, which can already satisfy two persons. You can choose from any of the available dishes that are available for take-out purposes: Kare-kare, Kalderetang Baka, Pork Sisig, Adobong Manok, Pritchon, Dinuguan, or Lechon Paksiw.
