Paella Gigante in Talisay City: A Feast for a Cause

The vibrant hues of the setting sun cast a golden glow as we drove along Lacson Street toward the Yanson Beach House in Talisay City, Negros Occidental, Philippines. Anticipation bubbled within me like the paella about to be cooked at Paella Gigante. This wasn’t merely a feast; it was a grand celebration of culture, community, and compassion. 

Upon arriving at the venue, we were greeted by the lively energy of the event. Dancers clad in colorful costumes swayed to upbeat music, while a band’s vibrant tunes filled the air. The beachfront property, tucked just off the highway, unfolded into a massive open area. At its heart, a roaring fire took center stage, and an 11-foot paellera stood ready to cook the largest paella in the Philippines.

Organized by Bring Joy! in partnership with the Embassy of Spain in the Philippines, this event wasn’t just about the food—it was about giving back. Every peso raised from the evening went directly to the Kalipay Negrense Foundation, an organization dedicated to rescuing, rehabilitating, and reintegrating disadvantaged children. 

It also happens that Mhel Sillador, my second cousin, played a vital role in the event. As the Executive Director of Kalipay, Mhel not only hosted the program but also embodied the foundation’s mission with passion and dedication. Seeing him in action—speaking with such heart about the children Kalipay supports—added a deeply personal touch to the evening. 

Adding to the festive atmosphere were booths from sponsors like Sant Jordi Meat Corner by SJFI, QUAN Delicacies, Maria Kucina Familia, Delicioso Wine Food Coffee, Azucarera, and Merzci, all offering delicious treats that complemented the culinary centerpiece. 

A Culinary Spectacle 

Under the expert hands of the LTB Philippines Chef’s Association, the paella preparation became a performance in itself. Led by Chef Jerome Valencia, the association’s president, and joined by chefs like J.A. Ventura, J. Gamboa, Margarita Marty, James Antolin, Sito Senn, Cherrie Uy-Tan, and Mikel Arriet, the team created a culinary masterpiece. 

Spanish Ambassador Miguel Utray Delgado and Consul General Ignacio Sanchez Taboada even joined in, lending a hand in the cooking process. Over 300 kilograms of olive oil, vegetables, chorizo, chicken, prawns, squid, mussels, rice, and 250 liters of stock went into crafting a paella that could serve 1,000 guests. The mouthwatering aroma filled the air, promising a meal as grand as the event itself.

Reflections on Past Paella Gigante and Paella Events 

As I watched the chefs pour their skill and soul into the giant paellera, I couldn’t help but reflect on past paella events I’ve attended. Memories of the Festival de la Paella Gigante in 2013 at the historic Casino Español de Manila, came flooding back. Home of Instituto Cervantes of Manila where I continued my Spanish lessons, the venue’s charm matched the grandeur of the dish. 

Similarly, I recalled the Paella Cook-Off at SM City Bacolod during the Flavors of the Philippines Tour by SM Supermalls and Madrid Fusion Manila in 2015. That event, along with its 2016 reprise during Paella Cook-off and Mango Festival, had the same communal spirit that makes paella gatherings so special.

Heartfelt Moments and Unforgettable Performances 

As the program unfolded, Mhel expertly guided the evening, weaving heartfelt speeches and lively entertainment. Kalipay’s founder and president, Anna Balcells, expressed deep gratitude to everyone who supported the cause, reminding us that every act of kindness helps create a brighter future for abused and abandoned children. 

Throughout the afternoon and onto the program, guests were entertained by a spectacular lineup of performers, including the MassKara dancers, the Bailes de Luces troupe, and the La Salle Chorale. The atmosphere was electric yet warm, enhanced by the gentle sea breeze, the glow of the sunset, and the rhythmic clinking of glasses filled with refreshing sangria.

As the evening stretched into night, the laughter, music, and camaraderie became the perfect ending to a meaningful celebration. More than just a culinary feast, Paella Gigante was a testament to the power of food, culture, and shared purpose to bring people together. 

Driving home with a full heart and lingering memories of the night, I felt immensely grateful to have been part of such a remarkable event. The evening wasn’t just about savoring a delicious meal—it was about coming together as a community to make a difference. I can’t wait for the next Paella Gigante to create more memories and continue supporting a worthy cause.
