The clock neared four in the afternoon when I turned off the highway toward the shimmering sea waters. Villa Olivia in Talisay City ushered us to Paella Gigante with vibrant life and rhythmic drum beats echoing around us. Right after registration, Masskara dancers in sequined costumes swept us into colorful and joyful movement with great energy. Their warm welcome felt like a beautiful promise made to every single guest arriving for the festivities. This would become more than just an ordinary event; it would be a genuine gathering of hearts united.
Paella Gigante 2026 had already begun weaving its spell over the excited crowd. Beyond the dancers, the venue opened wide under the late afternoon sky. Large white tents stood ready to host the evening feast. At the horizon, the sun poured gold across the calm sea, painting a breathtaking landscape. Chefs in tall white hats moved with focused grace near the cooking area.

The Paella Gigante Kick-Off: A Giant Pan, A Bigger Purpose
The ceremonial kick-off created a moment of collective breath for everyone watching with anticipation. With gentle reverence, a crane placed the massive paellera onto the heated pit. This steel pan weighed one ton and measured eleven feet in diameter, becoming a powerful symbol. H.E. Ignacio Sanchez Taboada poured the first stream of oil while others watched with pride. Ms. Anna Balcells, Kalipay’s Founder, followed with graceful intention near the giant pan.
Kalipay Trustee Gordon Alan Joseph and Chef J.A. Ventura, along with other chefs, joined the ceremony to lend their support. Each pour represented a pledge to help children in need. Every gesture wove culture with compassion for those witnessing the event unfold. Monsignor Ronald Quijano offered a blessing for the event and the cause it supports. His words reminded us that every grain carried intention for the children benefiting from this event.
The crowd fell quiet, then erupted in joyful applause. Chefs began their work with practiced precision while the fire heated the pan. The giant paellera, now alive with sizzle and steam, became the evening’s heart. It brought back memories of last year’s Paella Gigante, but this time, bigger, grander and more festive.






Savoring the Paella Gigante: A Menu of Stories
As saffron and garlic aromas drifted through the tents, I wandered near the catering area. That is where I met Larabelle. Young and poised, she handed me a beautifully printed menu with a gentle smile on her face. She introduced herself, adding that she was a beneficiary of Kalipay with quiet pride. During that brief exchange, helping children became personal for me, touching to my soul, a reminder of my past works in other non-profit organizations.
I looked down at the menu and became excited for the delicious journey awaiting us all to enjoy. It listed the following: Soup – Sopa de Ajo, a rustic Spanish dish where garlic and paprika warm the soul. Salad – Blue Cheese, balanced with sweet fruit, crunchy nuts, and tangy vinegar for the taste buds. Pasta – Aglio Olio, elegant Naples simplicity with garlic, olive oil, and chili flakes mixed well together.
Also in the menu were: Chicken – Mediterranean Chicken, vibrant with lemon, fresh herbs, and golden olive oil drizzled on top. Beef or Pork – Pesce Balsamico, where balsamic vinegar lends sweet-tart depth to the meat dish. Rice – Morisqueta, fluffy rice crowned with hearty beans and spicy tomato salsa served hot. And of course, the star: the Paella Gigante itself served hot for everyone eating there. Over 300 kilograms of ingredients simmered in 250 liters of stock within the giant pan.
Seventeen chefs from LTB Philippines Chefs Association, led by President J.A. Ventura, crafted every layer with great care. Every bite celebrated skill and love deeply within the hearts of all guests present at Paella Gigante. Food became a language of compassion for everyone sharing the meal.






Hearts Behind the Feast: Kalipay’s Mission
At the heart of the Paella Gigante Feast is the Kalipay Negrense Foundation. Weeks before the event, fellow Negrense Bloggers and I met with Kalipay’s team at Quan La Salle. Executive Director Mhel Enderes Sillador (who happens to be my second cousin), Trustee Chole Cuenca Chua, and their dedicated team shared powerful stories about rescue, rehabilitation, and reintegration programs for children in need. Those stories stayed with me deeply throughout the weeks leading up to the event.
That Paella Gigante briefing made the evening’s program resonate even deeper. During the event, the new Kalipay video launched, showing their works and the transformation on their team, volunteers and beneficiaries. The room grew still with emotion as everyone watched. Then Joey Abindan, a former beneficiary, shared his testimony with a steady voice. His grateful words carried undeniable truth.
He spoke of second chances and healing found through the foundation’s programs. Joey described a future beautifully rewritten by the help given to him. Later, Anna C. Balcells, Kalipay’s Founder, delivered a touching message to the crowd. Her words were tender, honest, and conviction-filled. She reminded us that every child deserves a safe space to heal and grow.
Children need room to heal, grow, and dream within a supportive community. The entertainment that followed celebrated hope. Masskara dancers returned with vibrant energy. Kalipay’s beneficiaries performed a moving contemporary dance, while La Castellana’s Bailes de Luces illuminated the night with bright lights.
This was not just performance but a celebration of life and hope. It was living proof of the work done by the foundation.





More Than a Meal: A Promise Kept
As evening deepened, stars joined the lantern glow above the venue. I found myself reflecting on the events of the night. Paella Gigante 2026 united Bring Joy Ventures, the Spain Embassy, the LTB chefs, the event partners and sponsors, and everyone present and offered support for this cause. But its soul came from something more profound. It came from choosing to gather, share, and give freely.
One hundred percent of proceeds would support Kalipay’s programs for children. That was the promise made to everyone attending. Laughter around tables echoed that commitment throughout the Paella Gigante festivities. Glasses clinked in agreement as everyone enjoyed the meal.
Joy was being served on every plate while hope was plated with care. Driving home, the sea whispered in my rearview mirror. I carried more than the memory of a magnificent meal, of a giant paellera under stars. I also carried the image of a child safe and dreaming.
