There are restaurants that simply serve good food, and then there are those that tell a story. For me, Rau Ram Café Bacolod belongs to the latter. Although I never had the chance to visit its humble beginnings as the tiny Saigon Café tucked inside a residential neighborhood, I was fortunate enough to witness its remarkable transformation into one of Bacolod City’s most beloved dining destinations.
I even had the privilege of attending the opening of its new home several years ago. Returning for its third anniversary felt like reconnecting with an old friend who had grown more confident without forgetting where it came from. The celebration also gave us the opportunity to sample familiar favorites alongside several exciting additions to the menu.


From a Backyard Dream to Bacolod’s Vietnamese Favorite
Every successful restaurant has an inspiring beginning, and Rau Ram Café is no exception.
Long before it became known for serving authentic Vietnamese cuisine, it started as Saigon Café, a modest garden restaurant that primarily welcomed family and friends. The restaurant’s founder learned Vietnamese cooking firsthand during an extended stay in Vietnam and brought those authentic recipes home to Bacolod. As word spread among food lovers, the intimate eatery quickly outgrew its original space, eventually evolving into the larger and more inviting Rau Ram Café we know today.
The name “Rau Ram” itself refers to Vietnamese coriander, a fragrant herb that appears in many traditional Vietnamese dishes. It perfectly represents the restaurant’s commitment to authentic flavors, fresh herbs, and recipes inspired by Vietnam’s rich culinary heritage.



An Open-Air Escape
One of the first things I noticed upon entering Rau Ram Café was how different it felt from most restaurants in Bacolod.
Instead of relying solely on air-conditioning, the restaurant embraces an open-air concept that allows natural light and fresh breezes to flow throughout the dining area. Lush greenery softens the surroundings, while wooden furniture, colorful murals, and Vietnamese-inspired décor create a relaxed atmosphere that feels both rustic and welcoming.
There is nothing pretentious about the place. It invites guests to slow down, enjoy conversations, and savor every bite. Whether you’re dining with family, catching up with friends, or simply craving a comforting bowl of pho, the ambiance makes you want to linger a little longer.
The spacious layout is also a significant improvement from its earlier days, making it easier to accommodate larger groups while still preserving the warm hospitality that made the original restaurant so memorable.


A Menu That Brings Vietnam Closer
Of course, the heart of Rau Ram Café has always been its food.
Vietnamese cuisine is known for balancing fresh herbs, vibrant vegetables, savory broths, and subtle seasonings. Instead of overwhelming the palate, every dish seeks harmony, and Rau Ram Café stays true to that philosophy.
During the anniversary celebration, we enjoyed an impressive spread that showcased both classic favorites and newer offerings.
The refreshing Goi Buoi (Pomelo Salad) awakened the appetite with its bright citrus flavors and crunchy texture. The Goi Cuon, or fresh Vietnamese spring rolls, wrapped shrimp and herbs in delicate rice paper, making each bite wonderfully light.
The crispy Cha Gio proved why fried spring rolls remain one of Vietnam’s most beloved comfort foods, while the Tom Rang Me, shrimp cooked in spicy tamarind sauce, delivered a delightful balance of sweetness and tanginess.
Another memorable dish featured shrimp coated in a rich plum sauce that beautifully complemented the seafood’s natural sweetness. Meanwhile, the smoky Ga Nuong, or grilled chicken, showcased how simple ingredients can produce remarkable flavor.
One of my personal favorites was the Bun Thit Nuong Cha Gio, a generous bowl of rice noodles topped with grilled pork, fried egg rolls, fresh vegetables, herbs, and a flavorful dressing that tied everything together. It was hearty without feeling heavy.
No Vietnamese feast would be complete without Pho Bo, Vietnam’s iconic beef noodle soup. Its fragrant broth, tender beef, fresh herbs, and silky rice noodles reminded me why pho continues to comfort diners around the world.
The Ca Kho To, catfish slowly simmered in caramel sauce, rounded out the meal with rich, savory flavors that paired perfectly with steamed rice.


More Than Just a Restaurant
As I looked around during the celebration, I realized that Rau Ram Café had become much more than a place to eat.
Families shared meals across large tables. Friends laughed over bowls of steaming noodles. First-time visitors eagerly photographed dishes before taking their first bite, while loyal patrons greeted the owners like old friends.
Restaurants earn that kind of loyalty only through years of consistency, genuine hospitality, and food that keeps people coming back.




A Culinary Journey Without Leaving Bacolod
Travel has taught me that one of the best ways to experience another culture is through its cuisine.
While nothing can truly replace wandering the bustling streets of Hanoi or Ho Chi Minh City, restaurants like Rau Ram Café allow diners to experience a small slice of Vietnam without boarding an airplane. Every bowl of pho, every fresh herb, and every carefully prepared dish tells part of that story.
Looking back, it has been a pleasure watching Rau Ram Café grow from the legacy of a modest neighborhood eatery into one of Bacolod City’s culinary landmarks. Its journey proves that authenticity, passion, and perseverance can transform even the humblest beginnings into something truly special.
